It's like the filling from Hello Panda but way more
I bought these pricey Plum organic nut butter filled bars for the kids (5 mini bars for $5) and I thought honestly they were a bit dry and chalky.
So I challenged myself to make a version that’s tastier and in bulk (like ~ 15 – 30 per batch). I taste tested with the kids and confirmed my bars reigned supreme!
The inside is like the chocolate from Hello Panda and the outside is chewy, almost gooey caramel. drool!
This recipe makes 15 – 30 bars (depending on how big you shape them). It’s no bake, healthy, high protein, and fun!
Note: If you make this with your kids they will eat the mixture before it’s actually formed into bars
Ingredients
- 1/2 cup peanut butter
- 4 oz dark chocolate ( I use Lily’s brand)
- 1 cup almond flour
- 1/4 cup PB powder
- 1/4 cup collagen peptides
- 1/3 cup syrup or honey ( I use coconut nectar to be low glycemic)
- 1/2 cup sugar (I use coconut palm sugar to be low glycemic but typically use Lakanto monk sugar)
- 1/4 cup peanut butter
- 1 1/2 – 2 cups cereal (I used millet but rice crispies probably works better)
Directions
- Microwave dark chocolate and peanut butter in 30 sec increments until melted.
- Put in fridge to cool.
- Mix dry ingredients in bowl, set aside.
- Mix 3rd set of ingredients in a pot over low medium heat until melted.
- Pour into dry ingredients and mix.
- Then add enough cereal so it’s not too sticky.
THIS IS THE POINT WHERE KIDS (AND MAYBE YOU) WILL WANT TO EAT STRAIGHT OUT FROM THE BOWL. You now just mix the chocolate into the cereal. It then becomes a cookie dough version that you scoop up.
- Put ‘dough’ between two sheets of parchment and roll out thin.
- Cut dough into equal squares/bar shapes.
- Take chocolate out of fridge once it’s more hardened.
- Form into little chocolate logs.
- Place each log on half of the squares and then cover with other squares, pressing to ensure edges are seamless.
- Put all finished bars in fridge to harden for 1 hr. Best stored in fridge.
