Soft & Chewy Fresh Mint Chip Cookies - NO butter

I absolutely love mint everything – ice cream, cookies, candies, chocolates, tea. If it has fresh mint in it – I’m there! Whipping up these cookies is a breeze – It’s only 4 ingredients! I kinda didn’t want to tell you they are low carb, no sugar, no butter because then you may think they’re icky. But seriously the first bite is like taking a big breathe of fresh air because of the soft mint flavor lingering in your mouth. These cookies are chewy and moist. NO BUTTER needed.

4 ingredients – that’s it!

Ingredients

  • I cup almond flour
  • 2 tbl sugar
  • 2 tbl water mixed with 3 drops peppermint extract
  • handful of chocolate chips
  • chopped up fresh mint (optional but really brings out the natural mint flavor)

Directions

Pre-heat oven to 350. Add everything together and stir well. It may seem like you need more water, but you probably don’t. Just keep mixing and it will form into dough.

At this point you could just eat the dough and call it a day. But if you want to make them cookies…

Scoop up into tiny balls and press down to flatten. These will make a dozen smaller sized cookies. Bake at 350 degrees for 12 min.

Because you’re using almond flour, you could just eat this dough and call it a day
