My breakfast tastes like whipped cream
Peanut butter whipped cream that is. A smooth, thick and creamy ball of whipped cream with some yummy crunch – full of hidden good for you ingredients too. Shhhhhh don’t tell them, just say ‘you want some peanut butter whipped cream?’
Ingredients
- Skyr icelandic yogurt plain – Even thicker and creamier than greek yogurt, more protein too
- Skyr is an Icelandic dairy product, and it’s been a provision of Icelanders for nearly 1,000 years. I love the Icelandic Provisions brand because it was developed in partnership with Iceland’s oldest farmer-owned dairy and It’s the only Skyr made in the US using the original Icelandic recipe with heirloom Icelandic Skyr cultures. That’s what makes it thick, creamy and delicious.
- PB powder – makes the yogurt even thicker and mixes well
- Cacao nibs – for crunch
- Hemp hearts – for slight nutty flavor plus omega-3’s, vitamins and minerals
- Canned whipped cream
Mix everything together in whatever ratio you want (including the whipped cream). The whipped cream is a must because it eliminates the tangy yogurt flavor. If you want it to taste less yogurty, add more whipped cream and PB powder. It’s an experiment so have fun with the creation. I use an ice cream scoop to scoop up which is great for presentation (which is part of the allure). Top with more whipped cream. Sprinkle with nibs and extra PB powder.
