Golden crispy outside - chewy soft inside

I have fond memories from childhood of going to Red Lobster. It was one of the few restaurants my family would occasionally visit (other than Burger King drive through for Whoppers – hmmm that’s not a restaurant – it’s fast food so maybe that doesn’t count). We didn’t eat out often because our family was in the restaurant business so we ate our own food. As a kid I was so bored of soup, rice and stir fry every day. I vividly remember having dinner at a neighbors and being so flabbergasted that the broccolli was covered in cheese sauce and there was a baked potato with butter. We didn’t use butter and melted cheese over any food would probably cause arguments in the house.

But back to Red Lobster 🙂 Our family of five would share 2 main courses and eat baskets of complimentary biscuits. Now I’ve recreated these iconic biscuits with a healthier twist. Don’t worry, I did not eliminate butter! There is just less and I’ve added low fat sour cream. In addition, instead of brushed melted butter, I use olive oil spray. You can use butter spray too. The addition of leeks give it a great flavor and pairs very well with the cheddar jack cheese.

In the end, the biscuits come out crispy on the outside with bits of crunchy leeks and cheese and chewy soft on the inside. This recipe is also super easy and forgiving to make – your ratios don’t have to be exact!

Ingredients:

  • 2 cups Kodiak cakes buttermilk pancake mix
  • 2 tsp garlic powder
  • 1/3 cup melted butter or more butter if you want
  • 1/2 cup light sour cream
  • 1/2 cup milk of choice
  • 1 1/2 cups shredded cheddar jack cheese
  • 1/2 cup chopped Leeks
  • Dried parsley
  • Salt to taste
  • Olive oil or butter spray

Directions:

  • Mix dry ingredients
  • Mix wet ingredients
  • Add wet ingredients to dry ingredients and mix
  • Form into balls on parchment lined baking sheet
  • Bake 450 degrees 10 to 12 min
  • Take out and liberally spray with olive oil or butter and sprinkle with parsley and salt

If you just want to make the real Red Lobster Cheddar Bay Biscuits from a mix – here’s a 4 pack – You do have to add your own cheddar cheese and butter, form them into balls and bake them, so the effort is about the same 😉
