Lunar New Year Recipe: Fast and Easy Plump and Juicy Chinese Mushrooms

I absolutely love mushrooms – especially Shiitakes. Instead of braising or simmering for hours on the stove, you can make these tasty mushrooms fast with the Instapot.

Here’s a no-fail quick, easy and healthy way to make Shiitakes so they stay meaty, plump and juicy!

It’s only 3 steps!

I used Chinese oyster sauce but you can use ANY sauce you’d like. How about BBQ or Thai Curry mushrooms? Yum!

Pair these flavorful mushrooms with broccoli and plain steamed rice and you’ve got a delicious soul warming meal!

Ingredients

  • Dried Shiitake Mushrooms: 12 – 15 mushrooms
  • Oyster sauce or sauce of your choice – 1/3 cup
  • Fresh minced garlic or garlic powder
  • Fresh slices of ginger or ginger powder
  • 1 Cup Water

Recipe

  • Wash and rinse the dried mushrooms. Soak them in water for up to 5 hrs until they are soft. They should feel spongy.

  • Squeeze out excess water like you would a sponge. Cut off the stems.
  • Place mushrooms in the Instapot with 1/3 cup Oyster sauce, 1 cup water, garlic and ginger. High Pressure cook for 20 min. and natural release.
  • This is how they’ll look when done.
    • Steam some broccoli and cook white rice while waiting for the mushrooms. Doesn’t this look delicious?!
