Peanut Butter Stuffed Sweet Potato Pancakes: Let's Have Dessert for Breakfast
This is part of my breakfast that tastes like dessert series but is nutrient dense with hidden veggies.
Many things taste better stuffed with peanut butter, wouldn’t you agree? I have the most addictive peanut butter stuffed sweet potato pancakes recipe for you – fluffy, soft AND ooey gooey – Delish!
Steam a bunch of peeled sweet potatoes and use them throughout the week. Steamed sweet potatoes are very versatile as you can add them to oatmeal, pancakes, smoothies, baked goods, soup, mashed up, etc.
This morning I mashed them into my go to whole grain protein pancake mix: Kodiak Power Cakes. When I have family/guests over, I make these pancakes and they think it tastes just like buttermilk pancakes. There is no weird protein flavor at all. This is why Kodiak Cakes is a pantry staple of mine!
I smeared peanut butter between two pancakes. Cut the pancakes into quarters and served with maple syrup and whipped cream. This is enough pancake for a family of four or one very hungry adult. Easy, healthy and decadent!

1 tbl Peanut butter (100 cal), Whipped Cream (20 cal), Lakato Maple Syrup (25 cal)
